Vegetable Schezwan fried rice

Time for Chinese again.Sunday special was Chinese yesterday.The rice came out very good and spicy.You may adjust the Schezwan sauce as per your taste.Schezwan means spicy.My kids and myself love Chinese food very much.Same method given below you may prepare with the Noodles too.I prepared Prawns Schezwan to accompany with this awesome fried rice.You may have it just like that too since it has balanced spices.I added Cashewnuts coz I remember eating it in few restaurants which tastes truly yum.I just love the sizzling red color of the rice which makes it overall attractive and eye pleasing.


Ingredients:
Basmathi rice-2 cups
Capsicum-1,chopped
Green peas-1/4 cup,frozen or boiled
Carrot-1,chopped
Onions-2,chopped lengthwise
Spring onions-1/2 cup,chopped
Red chilly-3
Cashewnuts-15,bits
Schezwansauce-1/2 cup approx,You may also use readymade sauce


Method:
  1. Cook rice until stiff,drain and run cold water,drain off water if  any.
  2. Don’t overcook the  rice,you may also refrigerate the rice for sometime.
  3. Heat oil,fry red chillies and cashews for a minute  and saute veggies for sometime.
  4. Add paste,cooked rice,spring onions,salt to taste,stir fry in high flame until all the mixture is combined well.
  5. Serve it hot.
